Cauliflower Rice

  • 1 head cauliflower
  • 2tbs avocado/coconut oil
  • 1/4tsp sea salt
  • Ground pepper to taste
  • 2 1/2cup finely diced red onion
  • 1tbs minced garlic
  • 2cups broccoli florets
  • 1/3cup shredded carrots
  • 1/3 cup fire roasted corn
  • Protein of your choice
  • 2tsp soy sauce

1) Make cauliflower rice:  Add cauliflower to food processor pulse until broken into rice-size pieces

2) Heat a wok or large skillet over medium-high heat.  Add in 1 tbs oil, garlic, onion and 1/4tsp crushed pepper.  Stir for 30 seconds

3)  Stir-fry Cauliflower Rice:  Add cauliflower and salt to the wok and cook, stirring constantly for 2mins.  Remove to a bowl

4) Stir-fry Vegetables:  Place the wok back over high heat and add 1tbs oil, broccoli, carrots and corn.  Cook, stirring until broccoli is cooked through but still has crunch (3-4mins)

5) Stir-Fry Protein:  Cook protein of your choice

6) Finish Stir-fry:  Add cauliflower rice and soy sauce back into the work with veggies for an additional to mins
